Pomegranate juice has been found to have three times the antioxidant activity of red wine and green tea. Pomegranates are rich in vitamin C, potassium, and fiber. The majority of that fiber is found in the white seeds hiding beneath the pockets of juice. It contains 48 percent of the recommended daily vitamin C intake.
How to get to the seeds?
· Submerge the pomegranate in a bowl of water and pull apart the quarters, releasing the seeds with your hands.
· The pith will float and the seeds will sink. Remove the pith and discard, then drain the seeds.
